Traditional craftsmanship of regional coffee roasters - industry vs. craftsmanship!
We have been roasting coffee for many years and deal with green coffee, roasting times, quality management and all other areas from the coffee cherry to the coffee in the cup on a daily basis. In our roastery, the coffee bags and green coffees are intensively tested before roasting so that our quality standards can be maintained at a high level.
The gentle drum roasting then ensures that the green coffee becomes brown coffee beans. This roasting process takes us up to 20-25 minutes - because we take the time to slowly and gently develop the aroma of the coffee beans.
The taste in the cup reflects this: The gentle roasting of high-quality green coffee ensures an excellent cup profile, numerous aromas and a delicious coffee taste. In this way, we not only refine coffee in every step of the process, but also put a lot of love and passion into every coffee cup!
The comparison with industry - what are the differences?
While quality and passion predominate in traditional coffee roasters, in industrial coffee roasters it is usually margins and costs that are the basis for decisions.
This is of course reflected in the quality - here are a few short examples:
- A cheaper green coffee contains a significantly higher defect rate of the beans, i.e. green coffee beans that already have major defects and thus influence the taste profile
- A higher temperature results in a shorter roasting time, but the aromas cannot develop and due to the excessive heat and little cooling after the roasting process, oils are usually taken into the packaging and only then leak out (also bad for taste & health!)
