Colombia El Pastelito - La Majorana - Everything about the green coffee & the coffee farm
The ripe cherries are sun dried. 30 to 32 weeks pass between blossoming and harvesting. The soil is solid, sandy and without clay. It has its origin in volcanic ash with 20% organic matter and is very permeable to water - "picking method".
For generations, this family in Colombia has been intensively involved in the cultivation of high-quality coffee beans. As small producers, they attach great importance to the quality of their coffee and to maintaining the balance in the ecosystem, as well as to fair pay for the farm workers. With the creation of "Don Antonio Coffee", it is now possible to improve the economic situation of the farmers in the region. They are conscious of their environment and always strive to use only environmentally friendly products.

Natural sun drying on patios. When the residual moisture content of around 12% has been reached, the cherries are peeled. What remains are the beans surrounded by the parchment skin. This skin is removed from the coffee beans by machine and the coffee beans are sorted through sieves of different sizes. Later, the best coffee beans are selected by hand and packed directly.
